Oven Baked Chicken

My kids have a few things the request regularly- this used to be one of them. Oven Baked Chicken. I got the recipe from a Betty Crocker's Kids Cook Cookbook or you can find the original recipe HERE. It's so simple. And soooo delicious.

OVEN BAKED CHICKEN:


2/3 cup Original Bisquick® mix
1 1/2 teaspoons paprika
1/4 teaspoons salt
1/4 teaspoon pepper 
 
1/4 teaspoon onion powder
 
1/4- 1/2 teaspoon Mrs Dash Garlic and Herb seasoning
 1 package of Chicken Drumsticks - about 12 
DIRECTIONS:
 Heat oven to 425°F.  
Spray a baking dish with nonstick spray or use stoneware baking sheet (do not spray!) 
Add Bisquick, paprika, salt and pepper, onion powder, and Mrs Dash seasoning in a Large ziplock bag; Drop in one chicken drumstick at a time, hold closed and shake to coat chicken. 
Place skin sides down in dish .
  Bake 30 minutes; turn chicken. Bake about 10 to 15 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. 

I made this for my kids and they told me I make the best chicken EVER! <3

I served this with Mac and cheese and Edamame


Breakdown-
Chicken- $4
Mac and Cheese - about 58 cents (1 box- walmart brand)
Edamame  - 89 cents (thank you Sam's Club!)

(I dont include the other ingredients in the price because they are all staple items in my house and I only use a very small portion of them)

Meal for a family of 4 - $5.47
Price per person - $1.37

The kicker- I had leftover chicken that I deboned and will be using for dinner another night!!!!!!!!!

Introducing ME!

I am April-  a work from home, self employed, wife and mother of 2 girls. In May 2011, I did something I NEVER thought I could do. I quit my job of over 4 years in a doctors office in order to be a stay at home mom and to pursue my dreams of being a full time photographer. Well its been over 10 months- and I am still happily doing it. I love my life. I love being a mom, wife and photographer. My business is crazy thought- living in AZ my summer months are...how should I say this?? SLOW. How could they not be- last August it was 115 degrees almost everyday (why do I live here again?!). Because I have my slow months I have learned I have to learn to pinch pennies and stretch my food out. I wanted to be able to still provide my family with the meals they LOVE (ok maybe I love-- my kids are picky sometimes!) I am ALWAYS posting on my facebook about all the groceries I picked up and how I spent like $50 to feed my family of 4 dinner for 2 weeks. I am ALWAYS posting photos. People always ask for recipes- I don't always share, sometimes I do.  I decided to have a try again at blogging- I hate to tell you this- I will probably NOT keep up with it- SORRY! I am a busy lady and don't have a ton of time!
